Obsessed: Okra

Roasted okra and portobello mushrooms: Drizzle with olive oil, salt and pepper, and panko breadcrumbs. 425 for 30 minutes.  



Shrimp: sauté in olive oil with garlic and red pepper. toss with bow tie pasta. 



Simple salad: cucumbers, tomatoes, and feta

Instant Vintage

As Sister's birthday month continues here are adorable pictures of her with our parents and grandparents, pre-little sis. 


Roasted tomato soup

I was craving tomato soup and with 4 huge beefsteak tomatoes from the farmer's market I knew this was the time to make it. I found this simple recipe and made a couple minor changes. I added carrots and garlic to the roasting process along with topping the vegetables with a spicy infused olive oil, omitted the bell peppers and used chicken instead of vegetable stock. 


A drizzle of cream and a crusty baguette made this soup perfect for an easy week night meal.

Obsessed: Les Champs-Élysées by Joe Dassin

I finally saw the lovely Wes Anderson movie, The Darjeeling Limited last night. I thoroughly enjoyed it and I cannot get enough of this song they played at the end:

An afternoon snack


Phyllo cups filled with brie cheese topped with black raspberry jam. 
10 minutes at 350

Tacos

Too lazy to go to the store, I had a craving for tofu tacos. Knowing I at least had tofu and spices I searched through the fridge and discovered my hodgepodge of ingredients could actually come together to create a delicious meal.


I roasted the tofu in the oven with jalapeño peppers spiced with paprika, chili powder, cayenne and cumin at 425 for 20 minutes.  


Mango salsa: mango, green onions, cilantro, cucumber, jalapeño and lime


The finished product! Tofu, roasted jalapeño, mango salsa, sour cream, carrots, and feta cheese.

After several recommendations to visit the famed fruit stand robert is here, I finally made the journey with a couple regulars. After about an hour drive, I was ready to purchase some local produce and a delicious fresh fruit milkshake. I opted for strawberry, while the others respectively went for passion fruit, coconut, and banana.

To the new UMKC graduate!

For the past two months I have been in cahoots with my best friend's Mama and boyfriend to surprise her for her graduation, "Sidney Bosley" her if you will. We have been friends since fifth grade, and besides a brief falling out and rekindling in 10th grade we have remained close (sorry about that). I treasure her friendship so much and I am so proud of her for graduating college!
