Too lazy to go to the store, I had a craving for tofu tacos. Knowing I at least had tofu and spices I searched through the fridge and discovered my hodgepodge of ingredients could actually come together to create a delicious meal.
I roasted the tofu in the oven with jalapeño peppers spiced with paprika, chili powder, cayenne and cumin at 425 for 20 minutes.
Mango salsa: mango, green onions, cilantro, cucumber, jalapeño and lime
The finished product! Tofu, roasted jalapeño, mango salsa, sour cream, carrots, and feta cheese.
